150 years of Italia-ken

Italian cook Pietro Miola opened Niigata's first Western food shop in 1874, then founded Italia-ken on the current Nishibori site as the first restaurant in Japan opened by an Italian. Old photos and records are displayed throughout the hotel.

Heritage meat sauce and curry

The recipe for what is said to be Japan's first meat sauce has been handed down by word of mouth; try the Bolognese-style meat sauce spaghetti and classic chicken curry at Ristorante Marco Polo. Chinese restaurant SHI-EN, kappo Hotaru and sushi Ryubi are also in-house.

Breakfast made in front of you

Chefs cook omelettes to order with the hotel's traditional demi-glace sauce, rice balls are shaped on the spot from specially grown rice, and Niigata's local tare-katsu is fried fresh, alongside Italia-ken curry. Breakfast runs 7:00–10:00.
